凛和牛 -LEAN WAGYU-

The Deliciousness of Lean Meat A New Standard for Wagyu

LEAN WAGYU embodies the concept of "Wagyu with delicious lean meat."

LEAN WAGYU is a Japanese Black Wagyu from Kagoshima, raised over a long period without using feed additives such as Monensin, under strict control by our partner farms. Great care is taken in selecting cattle with excellent lineage for high meat quality.

A Rich Natural Environment and Carefully Selected Feed

Our partner farms in Kagoshima, where Lean Wagyu is raised, are committed to creating an ideal environment for the cattle and to maintaining the highest feed quality.

First, regarding the environment: the farms are located in high-altitude mountain areas blessed with clean air and rich natural surroundings, allowing the cattle to grow in a stress-free, healthy way. Their drinking water comes from natural underground sources.

In addition, these farms avoid using any feed additives such as monensin (*1) and instead feed the cattle a carefully formulated diet made from domestically sourced rice bran, soybeans, and barley over a long fattening period.

Low Melting Point Fat and the Wisdom and Skills of Our Craftsmen

Lean Wagyu is carefully selected from cattle with low-melting-point fat that melts effortlessly at body temperature.

In addition, our skilled butchers use their knowledge and expertise to determine the ideal cuts and preparation methods. This allows even those who typically avoid fatty beef or feel that highly marbled Wagyu is too rich to fully enjoy the umami of lean meat.

We are committed to offering Wagyu products that can be enjoyed regularly and comfortably.

Freshness Maintained with Advanced Freezing Technology

We use the latest Art Lock Freezing and Skin Pack Technology, setting a new standard in frozen meat preservation.

① Preserving Umami
Rapid freezing prevents cell damage and minimizes drip loss, ensuring the meat remains juicy and flavorful even after defrosting.

② Maintaining Texture
Unlike conventional freezing, our method preserves the meat’s natural tenderness and moist texture.

③ Long-Lasting Freshness
Quick freezing maintains meat quality over long-term storage, while the skin pack technology keeps freshness intact even after defrosting.

We deliver the original flavor of our carefully selected meat, so you can enjoy it in the best condition.
