LEAN WAGYU is a Japanese Black Wagyu from Kagoshima, raised over a long period without using feed additives such as Monensin, under strict control by our partner farms. Great care is taken in selecting cattle with excellent lineage for high meat quality.

Among these, we define "Lean Wagyu" as beef selected according to our unique standards, characterized by a low melting point of fat and a rich umami in its lean meat.

Although Lean Wagyu generally falls within the higher A4–A5 grade range with more marbling, we carefully select cuts and use expert butchering techniques to highlight the flavor of lean meat, resulting in Wagyu products that are easy to enjoy with a pleasant texture.

Lean Wagyu is carefully selected from cattle with low-melting-point fat that melts effortlessly at body temperature.

In addition, our skilled butchers use their knowledge and expertise to determine the ideal cuts and preparation methods. This allows even those who typically avoid fatty beef or feel that highly marbled Wagyu is too rich to fully enjoy the umami of lean meat.
